Hmmm, thinking about possible menus is making me very hungry! I have developed a fetish for Quinoa and so have been experimenting with different ways to use it! My fav at the moment is to cook it in chicken stock, separately lightly fry some chicken fillets, add mange tout, cashews, sweetcorn and peas, with a dash of soy sauce and a sprinkling of coriander. Delish!
